Soup it up for winter comfort
By Roslyn Franken
Soups are great all year long, but there's
nothing like a hot bowl of hearty soup on a cold winter day. It works like magic to soothe
away the stresses of the day with it's warmth and wonderful mix of flavours and spices.
Some like it clear, while others like it thick. Some like it made with meat, while others
like it with vegetables and beans. No matter how you like it, there is always a way to
invite soup into your regular healthy diet. However, if you want to keep it really
heart-smart, then you'll want to stick to the clear broth soups and avoid those made with
lots of cream and butter.
If you're trying to control your weight, eating soup that
is full of nutrients, but low in calories, is a great way to fill yourself up so that you
don't overeat on the main course, or snack on unhealthy choices in between meals. Here are
a few tips on how to make the most of soups:
Stick to home-made soups as opposed to store-bought. Soups
that you buy in the store or get in restaurants are typically overloaded with sodium so
you would want to only eat those in limited quantities. However, if you prepare your own
soup at home from scratch, you can control how much sodium it includes and therefore, be
able to eat it in much greater quantities without concern.
Prepare your soups in large quantities and then store
leftovers in the freezer. That way when you don't feel like cooking, at least you have
instant soup you can prepare. Simply heat it in a pot or pop it in the microwave for a few
minutes.
If you're looking for a snack between meals, why not have a
bowl of soup? This probably isn't the first choice that comes to mind, but hey, why not
give it a try? It may just help you get past your cravings of unhealthy food choices.
Roslyn's Sweet Potato Peanut Butter Soup
This soup is filling, nutritious and is low in calories. It
includes a number of spices that are excellent for digestion with antioxidant properties.
You can experiment with different amounts or omit spices that you aren't fond of. It also
contains garlic and ginger which have many healthful qualities as well. If you aren't as
crazy about garlic as I am, try putting less. Start your meal with a bowl of this soup or
use it as a snack when you need a little something to fill you up.
